Budaya Cina yang hadir di bumi nusantara sejak ratusan tahun lalu terus berjejalin dan berkelindan dengan budaya lokal sehingga menciptakan aneka budaya baru yang merupakan perpaduan dari keduanya dan sering disebut dengan istilah budaya peranakan. Semarang merupakan salah satu kota yang kaya akan fenomena akulturasi budaya Cina dan Jawa, khususnya dalam ranah kuliner. Sebut saja soto bangkong dan lumpia Gang Lombok. Kedua makanan tersebut mula-mula berasal dari daratan Tiongkok kemudian mengalami proses penyesuaian dengan lidah masyarakat lokal. Selain dua makanan tersebut, masih ada lagi kuliner peranakan yang menjadi makanan khas Semarang yakni tahu pong.
Kuliner dengan bahan dasar utama tahu goreng ini mulai dikenal di Semarang sejak tahun 1930-an. Nama tahu pong berasal dari kata kopong atau kosong. Tahu yang digunakan untuk membuat hidangan tahu pong memang merupakan tahu yang kosong tidak ada isinya. Namun ada juga pendapat yang mengatakan bahwa nama pong berasal dari kata ‘phong’ yang dalam dialek Banlam (Hokkian Selatan) berarti menggembung. Hal ini cukup masuk akal mengingat pada mulanya tahu adalah makanan khas Cina yang dalam bahasa Hokian disebut dengan ‘tauhu’ (kedelai yang difermentasi), yang kemudian menyebar ke wilayah Asia Timur, Asia Tenggara, hingga ke seluruh dunia.
Tahu goreng yang lezat ini kemudian disandingkan dengan sambal petis dan acar lobak. Petis inilah yang merupakan kuliner asli Indonesia. Berbeda dengan terasi yang dikenal hampir di seluruh kawasan Asia Tenggara, petis hanya dikenal di Indonesia khususnya di pesisir utara Jawa. Sejarah terciptanya petis berasal dari para nelayan di pesisir utara Jawa yang tidak ingin membuang sisa olahan makanan laut mereka. Sisa masakan tersebut lalu ditambah dengan gula jawa dan dipanaskan hingga mengental seperti saus dan digunakan sebagai teman makan kudapan.
Dua jenis makanan dari dua budaya yang berbeda ini kemudian disandingkan dalam satu wadah sehingga terciptalah menu tahu pong yang mampu menggunggah selera. Anda yang suka pedas bisa menambahkan cabai yang telah diulek ke dalam petis yang telah dicairkan. Kemudian makanlah tahu bersama dengan sambal tersebut, sensasi gurih, asin dan manis segera terasa di mulut. Jangan lupa tambahkan acar lobak yang asam dan segar sebagai penyeimbang rasa.
